Ice cream with Ricotta cream

 0.01 lb Neutral for Ice cream
 0.04 lb Dextrose
 0.06 lb Skimmed milk powder
 0.67 lb Arata Ricotta cream
 1.12 lbs Whole milk

Mix the sugar with the ice cream neutral, add it to the dextrose and the skimmed milk powder, add the milk slowly, mixing carefully.
Add the Arata Ricotta Cream and continue stirring until it forms a fluid and homogeneous mixture. The mixture must be left to mature and after not less than 60 minutes it must be passed in the batch freezer from where it will come out amalgamated and creamy.

Tips for customizing the taste
Ricotta flavored ice cream allows many possibilities for decoration and customization.
The best pairings are: with dark chocolate flakes; with pieces of pear or caramelized citrus fruits; or, recalling its Sicilian origins, with the crumbled cannolo wafer.
The versatility of a full-bodied flavor but at the same time delicate, the white/pale yellow color, an excellent base for inserting ingredients with contrasting colors, make it ready for your creations.
